Easy Egg Salad Recipe

A homemade mayonnaise gives the flavor to the easy egg salad recipe in combination with fresh, roughly chopped parsley. For a vegetarian meal, use the salad to complete a meal consisting of steamed vegetables.  But also, it is a fantastic side dish for a BBQ.

Ingredients:

  • 6 eggs, at least one week old
  • 1 onion, minced
  • 1/4 teaspoon of pepper
  • 1/3 teaspoon of salt
  • 1/3 cup of mayonnaise, homemade
  • 1/3 cup of parsley, fresh, chopped

Tip: Freshly laid eggs are difficult to peel, therefore use eggs that are 1-3 weeks old.

Step by step:

  1. Boil six eggs in a pot then peel
  2. Dice the eggs and the onion with a knife, chop the parsley after putting everything into a small salad bowl season with pepper and salt.
  3. Add 1/3 of a cup of homemade mayonnaise (the recipe is just below).
  4. In the porcelain bowl, toss all of the ingredients together, and serve with serving spoons.
