These easy salad recipes go great for a complete meal, a side dish or as we mostly have them a dessert. Salads with your evening meal are great way to reach your five plus a day goal. I know that in my family we are what you call salad addicts, we eat one every single day with dinner.

Tomato and spinach salad recipe

Simple but tasty. Two vegetable varieties with a vinaigrette sauce.

Ingredients:

Spinach
tomato
walnuts
  • 300-400g Spinach
  • 8 small tomatoes cut into wedges
  • Handful of walnuts (if your walnuts are store bought check for shells as they can be dangerous for teeth)

Sauce:

olive oil
water
red vine vinegar
fresh parsley
onion
black pepper
Himalayan crystal salt

  • 3 tablespoons olive oil
  • 2 tablespoons water
  • 3 tablespoons red wine vinegar
  • A small punch of parsley washed and dried
  • ¼ of a small onion
  • Salt and pepper

Method:

Blend the sauce ingredients together with a wand mixer or a food processor.

Then just combine the vegetables and sauce it’s as simple as that.

Cucumber, tomato and dill salad

My mum loves dill and always tries to find different ways to use it. It tastes absolutely delicious in this combination.

Ingredients:

cucumber
tomato
dill
  • 2 small Cucumbers
  • 8 small tomatoes
  • 1 cup dill

Sauce:

olive oil
apple cider vinegar
white pepper
Himalayan crystal salt

  • 3 tablespoons apple cider vinegar
  • Salt and pepper

Method:

Combine the sauce ingredients and toss together with the vegetables and voila.

Avocado with tomato and mozzarella salad plate

This is not exactly a salad but a vegetable plate. It goes well as an appetizer or as side dish and looks totally appealing.

Ingredients:

tomato
avocado
olive oil
basil
white pepper
Himalayan crystal salt
  • 8 small tomatoes
  • 1 avocado
  • 1 ball approx 100g mozzarella
  • Balsamic vinegar
  • 3 tablespoons olive oil
  • 12 leafs fresh Basil
  • Salt and pepper

Method:

To prepare this plate first layer the tomatoes, avocado and mozzarella attractively on the plate. Then drizzle the balsamic vinegar and olive oil over the top and finish of with fresh basil and a sprinkle of salt and pepper.
