This easy potato salad recipe is perfect as an accompaniment to BBQ's, any baked fish, fried sausages, chicken or steak.
This recipe has become so versatile with new variations mirroring the creators’ creativity and is a common find at family gatherings. A simple yet treasured dish that the whole family is bound to enjoy.
Serves 3 - 4
Steam the whole washed potatoes in your steamer for about 25-35 minutes. In the mean time boil a 1/2 cup of water and dissolve the vegetable stock powder in the water. When dissolved add the finely diced onion, let them soak for some time (it takes the edge of their sharpness when they are raw). Add the 3 tablespoons of olive oil, pepper and salt to taste. Potatoes absorb quite a bit of both. Then add the 3 tablespoons of vinegar and paprika. Mix and pour the dressing in a bowl.
Check if the potatoes are through by poking in with a knife or something similar. Without poking you can observe if they are ready by looking at the skin. If the potato skin starts cracking take them off the heat and let them cool down for a bit until the potatoes are hand warm.
Peel them and slice them thinly into the dressing. Then stir the potato slices into the dressing and add the cut dill, stir and let sit for 20 minutes so that the flavour can develop.
Garnish with cherry tomatoes and serve!
Spicing alternatives we like at times when we do not have dill are a combination of a
pinch of curry with ground caraway and some fresh parsley. For decoration boiled eggs cut in half go well.
